Yield: 24 morning buns.<\/em><\/p>\n<h2>How to Make Morning Buns<\/h2>\n<h3>1. Make the Sponge<\/h3>\n<p>Beat yeast, warmed milk, and 1 tsp. honey in the bowl of a stand mixer fitted with the paddle attachment. Let sit until foamy, about 5 minutes. Add 4 egg whites, 2 cups (250 g) bread flour, and remaining \u00bc cup honey; beat on medium-high until very light and thick, about 3 minutes. Remove paddle, scrape mixture into bottom of bowl, and sprinkle 1\u00bd cups (188 g) bread flour and the whole wheat flour over the top (do not stir). Let sit uncovered in a warm spot until bubbling up around the flour, 30\u201340 minutes.<\/p>\n<h3>2. Finish the Dough and Chill<\/h3>\n<p>Return the bowl to the mixer and attach the dough hook. Add 5 egg yolks, salt, orange zest (if using), vanilla, and chilled milk. Mix on low until a shaggy dough forms; increase to medium and work until smooth, soft, elastic, and climbing the hook, 8\u201310 minutes. It will clear the sides of the bowl but still stick slightly to the bottom; if after 5 minutes the dough is very sticky, add 1 Tbsp. bread flour at a time until just tacky. Reduce speed to medium-low and add room-temperature butter piece by piece, letting each absorb completely. This part takes a while, so be patient. The dough should be smooth, slightly tacky, and buoyant. Cover and chill at least 8 hours and up to 16 hours.<\/p>\n<h3>3. Place cut side up in muffin cups, cover loosely with plastic wrap, and let proof at room temperature until puffed and expanded to the edges of the cups, 25\u201335 minutes.
