Roasted Beet Salad with Goat Cheese

This roasted beet salad with goat cheese is easily one of our favorite beet recipes. The combination of tender roasted beets and our citrus dressing is incredible! Updated June 30, 2026 by Joanne Gallagher. Serves 4 to 6. Prep time 30 minutes, cook time 45 minutes, total 1 hour 15 minutes.

Key Ingredients

Beets

The star of our salad. Start with 2 pounds medium beets (5 to 6 beets), scrubbed and tops trimmed. Roast whole until tender. Use red beets or yellow/golden beets. To save time, purchase prepackaged cooked beets (about 2 pounds).

Citrus Dressing

Made with 1 medium orange and 1 medium lemon (zest and juice), 1 tablespoon honey, 2 tablespoons champagne vinegar (or white wine vinegar), and ¼ cup extra-virgin olive oil. Season with fine sea salt and freshly ground black pepper.

Toppings

4 ounces soft goat cheese, ⅓ cup walnut halves (toasted and chopped), and 2 tablespoons chopped fresh herbs like mint, basil, or dill. Finish with flaky sea salt (like Maldon).

Step-by-Step Instructions

1. Roast the Beets

Heat oven to 375°F (190°C). Place whole beets on a large sheet of foil, drizzle with 1 tablespoon extra-virgin olive oil, wrap into a packet. Roast until tender, about 45 minutes. Cool wrapped in foil to room temperature.

2. Make the Dressing

Zest half the orange and half the lemon. Combine zest, juice of the orange and lemon, honey, vinegar, ¼ cup olive oil, and a generous pinch of salt and pepper. Whisk until smooth.

3. Assemble the Salad

Peel cooled beets with a vegetable peeler, cut into wedges. Place in a large bowl and toss with one-third of the dressing. Spoon onto a platter in a single layer. Crumble goat cheese over top, scatter walnuts and herbs. Spoon more dressing over everything and finish with flaky sea salt.

Tips and Make-Ahead Options

Leftovers keep in an airtight container for up to 5 days. If making ahead, add goat cheese just before serving. You can swap raw beets for 2 pounds prepackaged cooked beets.
